Harlow makes pancakes every morning I will let her, and over the past two years, she has gotten really good at it. Every time I post on Instagram, everyone comments on her exceptional technique. From egg-cracking to flipping, she looks like a freakin’ professional. They also want to know her recipe, because my friends, Harlow makes some of the fluffiest, most perfectly golden brown pancakes around. And she’s consistent! They always come out, as she says which each flip, “PERFECT.”
What’s Harlow’s secret? She won’t make them from a box! Even though I have tried to convince her that box pancakes are sufficient many times. (Translation: easier for me.) Nope. She prefers to make them from scratch and everyone in our house agrees— they are MUCH better this way.
Here’s her tried and true recipe!
Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
Combine dry ingredients in a bowl, then add the wet ingredients and mix it up. Preheat a lightly oiled griddle or pan, and then use a scooper (we use a 1/2 cup measuring spoon for each pancake) to pour on the pan. We like to add individual chocolate chips per pancake instead of putting them in the batter, because some people in our house are plain pancake people.
Flip when you start to see air bubbles coming through the batter and then lightly brown each side. Harlow always adds a light pat with her spatula (aka Mr. Flippy at the house and Mrs. Flippy at the apartment) to make sure the pancakes have been properly cooked through. We had under done pancakes at a diner once and they were TERRIBLE. She still talks about it and we never went back.
Add syrup and enjoy!

Random question but what griddle do you use? I hate the way my pancakes turn out using my pans and would like to get a griddle as well.
I’m pretty sure our griddle came with our stove.
FYI you shouldn’t use cooking spray on nonstick pans–it damages their coating! You can use any kind of oil, but I prefer to use butter when making pancakes because it adds delicious flavor!

How much heat do you use with the on-stove griddle? I’ve tried using ours for pancakes and they just run to the edges unlike in a frying pan over medium heat

My whole childhood I had from-scratch pancakes with a capful of lemon extract, which is also delicious. I didn’t know that wasn’t how everyone ate them!

I usually do lettuce as the buns, more like a burger wrap I guess. I’ve also used bell pepper halves, but really depends on the size of your patty and bell peppers. The bell pepper added a crunchiness that I was missing. 🙂
